Thanks to a <strong>two-phase continuous cycle system by the Pieralisi company<\/strong>, a leader in the oil <strong>cold extraction<\/strong>, we can maintain very high levels of polyphenols and peroxides.<\/p>\n<\/div>\n<\/div>\n<div class=\"row\" data-aos=\"fade-up\">\n<div class=\"col-sm-12\"><img decoding=\"async\" src=\"http:\/\/frantoioruta.com\/wp\/wp-content\/uploads\/2019\/10\/img-frantoio.jpg\" \/><\/div>\n<\/div>\n<div class=\"row\" data-aos=\"fade-up\">\n<div class=\"col-sm-8 col-sm-offset-2\">\n<p>We try to get olives to arrive at our plant within <strong>6-8 hours<\/strong> from being picked. Inside, we keep the temperature rigorously controlled, and the oil is stored in a cool and dry place, at a <strong>constant temperature<\/strong> of 14 \u00b0C under nitrogen head in stainless steel silos.<\/p>\n<p><strong>Cutting-edge machinery and techniques<\/strong> allow us to <strong>enhance the organoleptic properties of the cultivars<\/strong>, intense expression of the Sicilian territory, even though we have to contain the yield.
